I do similar but don’t use vinegar.
Bring water to a simmer and lower each in carefully.

I use deeper pan
Vinegar no salt rolling simmer

I boil water then put the water in a pan bring it back to the boil, have the eggs cracked open on a plate, stir the boiling water in the pan fast so kit creates a whirlpool then put the eggs off the plate in and give it a bit then spoon them out, lovely, just like Roy does them data:image/gif;base64,R0lGODlhAQABAIAAAAAAAP///yH5BAEAAAAALAAAAAABAAEAAAIBRAA7.

Frying pan full of water. Bring to boil. Turn off heat. Crack eggs in. Leave until ready.
