Digital downloads do take more space than game discs but regardless of this buying a 500 gb version is false economy as by the time you deduct the space used for the X Box OS etc it doesn't take long before it's all used up , for example Halo Guardians digital version is 92 GB and GTA V disc install plus DLC ( which has regular updates )
44 GB ( last time i played , probably more now ).
I would say the average digital game is 40/60 GB and disc 35/40 , so 8 - 10 games and you're pretty much on the limits with a 500 gb hdd.
With Christmas on the way you should find a 1 TB S console with a recent or newly released game included for around £ 220/250 ish .

Disc or digital is irrelevant. They take up the same space, nothing runs off the disc during play. If you buy a digital game it just may come with any released patches as standard so appears larger. A disc will be the launch game but then the patches will also install so it's the same size regardless of disc or digital.

Digital has 1 benefit over disc - game sharing. Let's say you have 2x Xbox consoles, one for a family member and one for yourself. With a digital game you only need to buy one copy and this can be set up as such to work on two consoles, even simultaneously so you can play together. With disc copies you would need to purchase the game twice and have two discs.

As for £290 for a 500GB S console, I think that's a poor deal. I got my 500GB S with FIFA over a year ago for £199. I would assume there's bundles still in this ballpark, hotukdeals will be a good website to check for that.

There are other things to consider which you may not be aware of. The new Xbox One X is releasing on Nov 7th for £449. This will enable games to run at upto 4K resolution as well as offer higher quality textures and improved performance across many titles. I'd say it's well worth considering, especially if you have a 4K TV already and eager to feed it 4K content.

If gaming is not of critical importance, the S is still superb value all round and also offers 4K HDR disc and media streaming playback, as well as HDR gaming.
