I used to have a S600 Coupe

And yes Mercedes did a 190 2.5. I was lucky enough to have it newish as a company car. Strictly speaking it was about my level, but as the lease wasn’t finished but the guy already left it was my lucky day

Always had a soft spot for a Toyota Celica GT4 or 4x4

Still might yet...

There are a lot of French cars launched circa 2000-2005 that may potentially become future classics due to their striking designs. 406 Coupe, Avantime, Citroen C4 Coupe, Renault Laguna and so on.  There are potential electrical issues though, so do your research.

Classic mercs of the 80s and 90s like your 190 and the W123/W124 also seem to have gathering interest while still being surprisingly cheap.

The last of the Rovers are also worth a look. The Rover 75 V8 and MG ZT V8 have already climbed to around £10k.

The first generation Jaguar XKs are also a possibility.

FUN: Mazda MX5. There's loads out there for sale; all ages, all prices. Extremely affordable. It's been around so long and it's barely changed: more a slow evolution. Simple and easy to work on; loads of customisations too.

I would go for a scirocco storm, Corrado VR6 storm or an Audi S2. I am pushing it on the S2 front though. Clio williams or Original Megane if going French.
