Individually the parts are just over £1k from Amazon, so she is paying half as much again for OC to build it.  The components are also not the best quality (£50 PSU for example) either.  She could get better value by having an i5 cpu instead (would save at least £100).

Ah ok, I wondered if it would work. It's basically a Ryzen 3600, MSI B450 Tomahawk Max motherboard, 16gb 3200MHz RAM, and RX 5700 with a 512GB nvme ssd and 2TB hdd. Total was £1200 and you could either add a monitor there or buy it separately. A decent 1440p 144Hz model should be around £300.

If you get her to check Youtube channels such as Hardware Unboxed and Gamers Nexus, they have some great reviews and are recommending Ryzen as it can match the performance of the Intel chips at a much better price. That platform could eventually be upgraded to a 12-core 3900X or upcoming 16-core 3950X down the road too. The only possible upgrade on the 8700K is an 8-core 9900K and Intel usually change the whole socket so newer processors won't be compatible.

Just to note you can’t overclock the 7000k cpu on the b360 board, I would go for a z board over changing the cpu. You can get at least a 1ghz bump with no voltage increase.

Your not just paying OCUK to build your paying for the 3 year back to base warranty too. I just copied the OCUK spec and put it together myself

OcUK Tech Labs Coffee Lake Midi Tower Gaming PC Configurator
Swapped the 1tb ssd for a 120gb, use the only ssd for os and the 1tb HDd for files this way you don’t lose files when you need to reinstall wimdows

I'd go for a Z390 board and some more (and faster) memory as well.

Nope. Split the SSD, 256GB for windows the rest for programs and games. SSDs are cheap enough now. You don't want to be waiting 5 minutes for games to load

If she's mostly interested in gaming, and the games already specified are the target for performance, she could quite easily get a computer for much less and still not run in to any performance bottlenecks. A decent computer will still handing all the other regular non-gaming related tasks without any issues.

It's not specified whether she has all the other accessories needed or not, but spending less on the tower will allow for more money to be spent on a better/additional monitor, keyboard   mouse, speakers/headphones, a nice chair, etc.

If she's not interested or comfortable building the computer then I wouldn't worry about that, go pre-built (even though it'll certainly cost more), and if she's buying a pre-built computer I also probably wouldn't want to concern her with whether overclocking is something she'd want to consider.

In my opinion, a slightly cheaper computer with some nicer accessories to go with it sound like the better option for her.

Ssd’s are cheap, os on a small drive and games and files on another. When you brick the os and haven’t got a recent backup you’ll be glad you did.
I have wildlands and farcry 5 on a 1tb wd blue it loads in less than 2mins
