Why not - does Apple Pay have better buyer protection?

Well my original quote should maybe have been "may be seriously cutting into your consumer rights".  The whole thing is deeply murky and even if Apple Pay is covered by s75 today it could change something in the back end tomorrow about the way it does things and you would lose your coverage.

Really good article about what a mess it all is here:

Revealed: Section 75 credit card protection may fail due to payment processing loophole - shoppers beware

Technically you could lose your protection just by virtue of the way the merchant processes your keyed in details direct from your credit card - I think if Worldpay is processing you're pretty safe but there are payment processing companies out there that aren't "merchants" in the traditional sense and so will invalidate your coverage.

No real way of telling.  I suppose maybe we get to a stage where you're better off using one of the better know agencies like Apple Pay if you know what their internal rules and protections are - but personally for now I'd generally be looking to try and make as direct a payment as I can with my credit card if its something I'm really looking for protection on.
