Attempting to make pastrami anyone made it?

So I really like pastrami and fancy a go anyone successfully made a good one or has a good recipe?
Looks like it needs 5 days marinating at least!!

Hopefully the taste will be worth the effort

I made some last year, I'll try and find the recipe I used...

Edit: I've had a quick look and don't recognise the one I used. If I find it I'll post back.

Went around town today trying to source Prague powder but no luck, so will order some online, butcher gave me some smoked powder he uses to cure his brisket reckons 1/2 inch per day but think I’ll order some Prague powder on line and go from there.

That's correct I can let you know where I get my Prague powder from but I should confess I help run their forum so I may be biased

I’ll take biased been cheffing a long time but there’s a few new things I want to try this year as I have a little more time, bacon is on the list too and I do have a whole local pig due to,be butchered soon!!

6 days brining smelling pretty potent

Spice rubbed in and into oven for 3 hours going to have a go at making marbled rye later some pickles and dinner will be sorted hopefully

3.5 hours slow cooking
