Attempting to make pastrami anyone made it?

Got to say that was enjoyable made as close to a Reuben sandwich

Homemade marbled rye
Warm pastrami
Swiss cheese
Pickles and tomato mayonnaise

I take it you will be making pastrami again?

Yes it’s one of those things I had to try, despite being a chef for about 30 years there’s still so much I want to try out

I have got tonnes of pastrami left for,next couple of days I’m sure I will make more, next up is bacon I think, I have a whole pig due to be slaughtered in the next couple of weeks !!!

Then once I can get outside more I want to get into smoking, need to research buying a cheap smoker or making one.

Thanks for that, say I bought the above cold smoker could I use it in a metal dustbin with racking, then use this method                                 Using a stove hot plate to hot smoke, and cook?

Just thinking of utilising the same equipment to do 2 jobs !!

Yes, probably, but with the caveat that the Zinc plating can release toxic chemicals if it gets heated too hot.  By which I mean burning temps, not hot plate ones.

I don't know what your budget is but if you want to hot and cold smoke, then something like this may suit:

Cheers, looks good, I may try the bin method as whole thing will cost £30 ish and if I use it enough upgrade there’s so many things on the list Roccbox etc got to economise where possible as you said I think it’s unlikely for the galvanise to release toxic chemicals at the heat I would be using.
