To lose the bit of weight that I did, I had to eat between 1200-1500 calories per day. I doubt any diet would recommend 2300 calories of junk food. I'd need to walk from here to my nearest 5 Guys in Belfast to justify having one of those meals.

For you maybe. I'd honestly eat four of those burgers you mentioned as a between meal snack and think nothing of it.
I'm on the scrap heap nowadays, but back when I was alive I was into weights and used to be around the 23 stone mark. Big eating has been the norm for me for years. Of course to someone of average size (no idea of your size) it would seem crazy.

Yeah I know but it's nothing to do with eating habits. In fact since the new year I've turned over a new leaf and got back into training. Instead of sitting about waiting to be ill I've started weights and cardio. I'm loving it and noticing gains already

Good for you, keep at it.  But I think it would be naive to suggest your (historical) vast intake of crap food hasn't had some effect on you.

I have no idea, when I was training properly I was eating a vast amount of what people would describe as 'crap' yet was in the best shape of my life. Of course that doesn't show what's going on inside, but on the other hand eating healthily doesn't mean you are in great shape inside either.
