Did you read my earlier post about this? Forget your 5ghz network on your phone. Join 2.4ghz. Phone should pick it up. Turn your phone Bluetooth off and your watch should still work. Then you can turn Bluetooth back on and join your 5ghz network again.
Do not forget the 2.4ghz network. It has to stay in the known networks for the watch to be able to use it.
The only reason you need to forget the 5ghz network first is so that when you join it again it's your first network so gets priority over the 2.4ghz one.

I used the activity app today, first for a walk and it measured distance. I cycled to work and it never measure distance or speed. The phone was in my bag but I thought it would have used the GPS.
I'll try again in the morning.

I assume you used 'Outdoor cycle' and not 'Indoor cycle'?

I tried it again this morning with the phone in my pocket and still didn't monitor speed or distance, might try it later with different activities.
EDIT: I've been on to apple support and someone else has rang in with the same issue so sounds like a software bug.

Yes bud I did - it was seeing your post that made me try it.  I cannot get it to stay on the 2.4ghz when I enable 5ghz on the home hub and the iPhone switches back to 5ghz. I even tried changing SSID and nothing ***

So your home hub had the same ssid for the two networks and you've now given them separate ones? If they had the same ssid I can see how that might make it a bit weird. The watch always seems to take a short while before it connects to the wifi. I'm sure you can't be the only one with this issue.

If you turn your phone Bluetooth off and the watch can still use apps that use data then it is on the wifi.
